Before joining Clontarf Castle in 2012, Head Chef Stuart Heeney worked at some of the finest hotels and restaurants across the world, from the Michelin Star awarded, Chapter One where Stuart trained under Ross Lewis to working in the Old Dubliner under Head Chef Eamonn Walsh and then working in Germany alongside Bord Bia to promote Irish Cuisine.
